OUR STORY

The Eighty Six is an intimate West Village steakhouse rooted in history, serving American classics with a deep appreciation for New York’s culinary past.

Set within the former home of Chumley’s at 86 Bedford Street—a legendary Prohibition-era literary haunt frequented by Hemingway, Fitzgerald, and Steinbeck—the restaurant revives the spirit of classic New York dining while honoring the storied legacy of its landmark address. Its name pays homage to both the building’s 100-year history and the culinary lore of the term “86,” believed to have originated when bartenders discreetly ushered guests out the hidden side door during Prohibition.

Led by Chef Michael Vignola, the menu draws inspiration from the New York Public Library’s Buttolph Collection—one of the world’s largest culinary archives—reviving historic accoutrements and dishes with precise technique and a modern touch. This comes to life in the Dry Gin–Celery Victor mignonette, house-made sauces like malt-aioli, and classic French glazes and compound butters.

At its core is a rotating selection of world-class steaks, cut and aged in-house beneath the century-old bar, complemented by house-made pasta, pristine seafood, and modern interpretations of classic sides. House-Aged Whole Jurgielewicz Duck, served with foie gras sausage, recalls the luxurious saucisson de canard au foie gras of legendary kitchens, while Filet au Rossini honors 19th-century opera maestro and gourmand Gioachino Rossini for whom the dish was created. Even the Waldorf salad, dating back to the late 1800s, is elegantly revived. The beverage program takes its cues from Prohibition-era tipples, completing the experience with precise martinis, inventive cocktails, and a wine list showcasing vintage depth and coveted collector selections.
